Muesli Cookies

Yummy Muesli cookies your kids will love!

Materials Required

Muesli Cookies
  • 1 cup muesli
  • 1 cup SR flour
  • 1 cup rolled oats
  • 1/2 cup desiccated coconut
  • 1/2 cup chopped apricots
  • 1/2 cup sultanas
  • 1/2 cup walnuts
  • 1 tsp cinnamon
  • 1/3 cup peanut butter
  • 150g melted butter
  • 1/4 cup golden syrup
  • 1/2 tsp bicarbonate of soda
  • 1 tsp boiling water

Method

Mix muesli, SR flour, rolled oats, desiccated coconut, chopped apricots, sultanas, walnuts and cinnamon in a large bowl.

Combine butter, peanut butter and golden syrup in a saucepan and melt over low heat.

Dissolve bicarbonate of soda in boiling water.

Ensuring children do not touch the pan show your little one what happens when you add the dissolved bicarbonate of soda into the melted butter mixture.

Add the bubbling mixture to the dry ingredients and stir until well combined.

Roll tablespoons of mixture into a ball and flatten slightly with a fork.  Place biscuits onto lined tray and bake at 180°C for 12 - 15 minutes or until golden brown.

These will keep in an airtight container for up to 3 days but they are unlikely to last that long once you and your little one taste them.

My wife cooked these cookies up with the kids and they were delicious! Quite crumbly however so not something to be eaten outside the kitchen -  can anyone suggest something to keep the cooked biscuits together a bit better?

I made these as a slice and drizzled with dark chocolate and they were brilliant.  The kids loved them but I think I loved them more.
